28 August 2020When you are trying to limit yourself to 1400 calories a day, a breakfast that is delicious and filling is quite a hard task. During the week we have quick and easy eggs, but come the weekend I like to try and create a more indulgent feeling breaky/brunch. It isn’t until you try this that you realise all of those standard brunch recipes, are pretty high-calorie, and as we aren’t prepared to eat lettuce for the rest of the day, some further research was required. Then I stumbled upon an ‘egg in a bagel’.

Looks good right? And around 260 calories by my estimation. All you need is half a bagel, an egg, some sort of brunchy meat (I used ham) and some cheese. My personal opinion is that cheese isn’t necessary, but my wife-to-be would strongly disagree. Although she thinks cheese is essential on 99% of meals. Dip the crunchy ‘hole’ cut to make the well for the egg into the runny yolk and you have a delicious brunch that leaves some calories for the rest of your day. Glass of wine anyone?
